Genmaishu (玄米酒): Sake made from unpolished rice. Rare.

Genshu (原酒): Without added water after pressing (undiluted sake), often stronger, with a higher alcohol content (18 %).

Ginjo (吟醸): A Premium sake category (TOKUTEI-MEISHO-SHU) that uses rice polished to between 50 % and 60 %. If "Junmai" is not indicated before the word, it means that a small amount of distilled alcohol is added.
